Ingredients
- For boiling
organic potatoes: 250 grams
salt: 1 tsp
organic turmeric powder: 1 tsp
water: 1 cup
- For baking
salt: ½ tsp
organic black pepper: ¼ tsp
organic smoked paprika: 1 tsp
organic dried oregano: 1 tsp
organic olive oil: t tbsp
Directions
- First wash and strain your potatoes. If you prefer your potatoes skinned then do so now, but I personally love these wedges with the skin on.
- Cut each potato into half, and then slice them up into wedges.
- Try not to cut them too thick otherwise they will take much longer to get crispy in the oven.
- Place the potatoes, salt, turmeric powder into a medium sized saucepan and add the water, bring to the boil and cook until you can stick a knife part way into the potatoes.
- Make sure to keep your eye on it so as to not over boil.
- The addition of turmeric here helps to achieve that iconic yellow hue, making these wedges not just taste good but also looks really appetizing.
- When the potatoes are partly cooked, strain, and add to a large bowl. Add in the rest of the spices and olive oil, and give it all a good toss to combine.
- This step (the tossing) is really important as it helps to create that delicious crunchy coating when baked.
- So if you think you’re done tossing, keep going for another 30 seconds or so.
- Add to a lined baking sheet and bake at 180 degrees for 40-45 minutes. Depending on how thick the wedges were cut, they may require a little less or a little more time.
- Do a quick check in between, give them a quick toss and change the cook time according to your desired crunchiness.
- You’re done! Now they are ready to enjoy with your favourite main, perhaps some delicious grilled fish.
