Sweet Potato Biscuits Ingredients
1 cups of flour
1 cups of whole wheat pastry flour
1 teaspoon of salt
1 tablespoon of sugar
1/4 teaspoon of baking soda
1 tablespoon of baking powder
6 tablespoons of cold butter
1 cup of cooked sweet potato flesh
1 cup of buttermilk (or plain milk combined with a couple teaspoons of vinegar)
Sweet Potato Biscuits Directions
- Preheat oven to 450 degrees F.
- Pulse together the flour (salt, sugar, baking powder and baking soda) in a food processor.
- Add the butter and pulse until it is in pea-sized pieces.
- Remove the mixture from the food processor to a large bowl.
- Add the buttermilk and puree the buttermilk/potato mixture in the food processor until it is completely smooth.
- Stir the buttermilk/spud mixture into the dry ingredients, mixing only a few more times.
- Pat the dough out flat and fold it over onto itself several times.
- Flour your hands and a cutting surface and gently pat the dough into a rectangle about 1/2 inch thick.
- Cut the dough into squares or rectangles using a pizza cutter or knife.
- Place the cookies on an ungreased cookie sheet and bake them for 10 minutes.
- Turn off the heat and leave the cookies in the oven for another 5 minutes.
- Let cool before serving.
