Sweet Potato Biscuits Ingredients

  • 1 cups of flour

  • 1 cups of whole wheat pastry flour

  • 1 teaspoon of salt

  • 1 tablespoon of sugar

  • 1/4 teaspoon of baking soda

  • 1 tablespoon of baking powder

  • 6 tablespoons of cold butter

  • 1 cup of cooked sweet potato flesh

  • 1 cup of buttermilk (or plain milk combined with a couple teaspoons of vinegar)

Sweet Potato Biscuits Directions

  • Preheat oven to 450 degrees F.
  • Pulse together the flour (salt, sugar, baking powder and baking soda) in a food processor.
  • Add the butter and pulse until it is in pea-sized pieces.
  • Remove the mixture from the food processor to a large bowl.
  • Add the buttermilk and puree the buttermilk/potato mixture in the food processor until it is completely smooth.
  • Stir the buttermilk/spud mixture into the dry ingredients, mixing only a few more times.
  • Pat the dough out flat and fold it over onto itself several times.
  • Flour your hands and a cutting surface and gently pat the dough into a rectangle about 1/2 inch thick.
  • Cut the dough into squares or rectangles using a pizza cutter or knife.
  • Place the cookies on an ungreased cookie sheet and bake them for 10 minutes.
  • Turn off the heat and leave the cookies in the oven for another 5 minutes.
  • Let cool before serving.
